Ingredients:
1 ½ cups all-purpose flour
½ teaspoon kosher salt
½ teaspoon baking soda
¼ teaspoon cream of tartar
½ teaspoon ground cinnamon
½ teaspoon ginger
¼ teaspoon allspice
¼ teaspoon ground cloves
⅛ teaspoon nutmeg
½ cup unsalted butter
½ cup white sugar
⅓ cup light brown sugar, packed
1 teaspoon vanilla extract
1 large egg
Rolling Sugar:
¼ cup white sugar
2 teaspoons cinnamon
Glaze (Optional):
¼ cup confectioners’ sugar
1 tablespoon milk, or as needed
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with parchment paper a rimmed baking sheet.
Step 3: In a medium mixing bowl, add the flour, baking soda, cream of tartar, and salt. Stir until well mixed.
Step 4: Add the ginger, allspice, clove, nutmeg, and cinnamon. Whisk for 1 to 2 minutes or until well mixed.
Step 5: In another mixing bowl, add the sugar, butter, and brown sugar. Use a spatula to mix until smooth and creamy.
Step 6: Add the egg and vanilla. Mix until well blended.
Step 7: Transfer the flour mixture into the butter mixture. Mix until well combined.
Step 8: Cover the mixing bowl with plastic wrap and place inside the fridge to chill for at least 1 hour.
Step 9: In a small mixing bowl, add the sugar and cinnamon. Stir until well mixed.
Step 10: Spoon 2 tablespoons of dough and form it into small balls.
Step 11: Place the balls in the sugar-cinnamon mixture and coat them well.
Step 12: Arrange the balls on the lined baking sheet. Make sure to leave about 3-inches space between each ball.
Step 13: Press the balls gently to flatten them out.
Step 14: Place inside the preheated oven and bake for 10 to 12 minutes or until the colour turns brown.
Step 15: Remove from the oven and let it sit on a wire rack to cool at room temperature.
Step 16: In a small mixing bowl, add the milk and confectioners’ sugar. Stir until well mixed and brush it on top of the cookies.
Step 17: Serve and enjoy!
Notes:
If you are using sea salt instead of kosher, adjust the amount to ¼ teaspoon.
