Ingredients:
1.3-pound ground turkey (extra lean)
6 small links (9oz) chicken maple sausage
1 sweet onion, chopped
3 cloves of garlic, minced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1 15.5ounces can cannellini beans, drained and rinsed
1 15.5ounces can red kidney beans
1 29ounces can pumpkin purée
1 28ounces can diced tomatoes
1 12 fl. Ounces bottle pumpkin beer
½ c chicken broth
2 tablespoons chilli powder
1 teaspoon oregano
1 teaspoon cumin
2 teaspoons brown sugar
½ teaspoon cayenne pepper (optional)
4 tablespoons olive oil
Sea Salt and pepper to taste
TO GARNISH:
Sour cream
Grated cheddar cheese
Green onions, sliced
Directions:
Slice the sausages into thin cuts.
Place a large pot on the stove and turn the heat to medium.
Add 2 tablespoons of olive oil and allow it to become hot.
Add the garlic and onion, then sauté until aromatic and soft.
Add the bell peppers and sauté until translucent.
Remove the veggies from the pot.
Add more olive oil and allow it to become hot.
Add the sausage and ground turkey, then sauté until brown.
Sprinkle salt and pepper to taste.
Put the sauteed veggies back in the pot as well as the pumpkin, beans, spices, sliced tomatoes, pumpkin beer, and chicken broth. Give it a good stir until well combined.
Reduce the heat to low and allow the mixture to simmer for about 2 hours.
Add more seasonings if needed.
Garnish each serving with grated cheddar cheese, a dollop of sour cream, and chopped green onions.
Serve and enjoy!
Note:
Feel free not to add meat if you want a vegetarian version.
