Ingredients:
½ onions, diced
A pinch of pepper
2 cups of chicken broth could use water
1 cup white rice not instant, we use long grain white rice
1 teaspoon garlic salt
1 can cream of chicken soup
½ cup cheese, cheddar, shredded
2 tablespoons olive oil
1-pound chicken boneless, skinless breasts or thighs, cut into cubes
1 cup mixed vegetables, frozen
Directions:
Add olive oil to your Instant Pot, then press the “Sauté” button and allow it to become hot.
Add the onions and chicken cubes, then cook for a few minutes until soft and brown. Turn it off.
Add the seasonings over the chicken together with the broth, frozen veggies, and chicken soup. Stir everything until well incorporated.
Add the rice on top of the mixture. Make sure not to stir.
Cover the Instant Pot, then press the “Manual” button to pressure cook for about 9 minutes. Let the pressure release naturally for about 3 minutes.
Add the cheese and stir until completely melted.
Top each serving with more cheese.
Serve right away. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them in the fridge. Reheat for a few minutes before serving again.
