I love these Potatoes and Green Beans so much! This dish is the perfect combination of good old potatoes and beans. Try it now!
Ingredients:
1 ½ pound potatoes
1 ½ tbsp. olive oil
½ teaspoon salt
⅓ teaspoon pepper
½ tablespoon taco seasoning
½ tablespoon oregano
For Green Beans
1 pound green beans
½ tablespoon olive oil
4 garlic cloves, minced
¼ teaspoon salt
Directions:
Step 1: Slice into medium cuts the peeled potatoes.
Step 2: In a medium mixing bowl, add the sliced potatoes. Add in as well the taco seasoning, olive oil, oregano, salt, and pepper. Toss until well combined.
Step 3: Transfer the seasoned potato sliced onto a large baking sheet. Make sure to leave a space between each slice.
Step 4: Place the potatoes inside the oven and bake for 15 minutes at 200 degrees C or 400 degrees F.
Step 5: In the meantime, in the same mixing bowl of the transferred potatoes, add the green beans, garlic, olive oil, and salt. Stir until well combined.
Step 6: Remove the potato slices from the oven.
Step 7: Add the green beans over the potatoes and toss everything until well mixed.
Step 8: Put the baking sheet back in the oven and bake for 20 to 30 minutes more or until done.
Step 9: Remove from the oven. Serve and enjoy!
Notes:
Place any leftovers in an airtight container and put inside the fridge. It can last up to 3 to 5 days.
Reheat for a few minutes at 175 degrees C or 350 degrees F.
