Ingredients:
1 tbsp olive oil
1 lb kielbasa, cut into ½ inch pieces
2 garlic cloves, minced
½ c finely diced yellow onion
½ c peeled and finely diced (2 large carrots)
½ c finely sliced celery (2-3 stalks)
4 c chicken stock
1 ½ pounds potato, cut into cubes
2 c milk
2 c shredded cheddar cheese
½ c shredded Parmesan cheese
½ tsp kosher salt
¼ tsp black pepper
¼ c chopped parsley
Directions:
Step 1: Place a Dutch oven on the stove and turn the heat to medium-high.
Step 2: Add olive oil and allow it to become hot.
Step 3: Add the sausage and cook for 5 minutes or until brown.
Step 4: Add onions, carrots, garlic, and celery. Sauté for about 2 minutes or until translucent and aromatic.
Step 5: Add the potatoes and chicken stock. Stir until just mixed, then allow the mixture to boil.
Step 6: Turn the heat down, then cover the pot. Cook everything for about 15 minutes or until the potatoes are fork-tender.
Step 7: Add the milk, cooked sausage, Parmesan cheese, cheddar cheese, salt, and pepper. Stir until well mixed, then cook for about 10 more minutes or until the cheese has melted completely.
Step 8: Add the parsley and stir until well mixed.
