Ingredients:
1 large tomato, diced
¾ c vegetable or chicken stock
1 lb (450g) gnocchi
4 strips of bacon
2 c fresh spinach
½ c heavy cream
2 or 3 cloves garlic, minced
1 tsp Italian seasoning
½ c Parmesan, grated
¼ c basil leaves, for garnish
½ tsp salt and fresh cracked pepper
1 tbsp butter
2 shallots or 1 small red onion, minced
1 teaspoon red chili pepper flakes to taste, optional
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the gnocchi into the boiling water, then cook for a few minutes until done. Drain and make sure not to cover.
Place a skillet on the stove and turn the heat to medium-high.
Add the bacon, then cook for a few minutes until crispy and brown. Transfer onto a clean plate lined with paper towels to drain any excess grease.
In the same skillet with the bacon grease, add butter and allow it to melt.
Add the shallots and garlic, then sauté for a few minutes until soft and aromatic.
Add the drained gnocchi and cook each side for about 5 minutes or until they turn brown. Sprinkle chili pepper, Italian seasoning, salt, and pepper to taste.
Add the tomato slices, then cook for about a minute or until soft.
Add the chicken stock, then scrape the bottom of the skillet to get the browned bits. Stir everything until well blended.
Simmer the mixture for about a minute or two.
Add the grated Parmesan cheese and cream, then stir until well blended. Cook for another minute.
Add the spinach, then cook for a few minutes until completely wilted.
Put the crispy bacon back into the skillet, then stir until well incorporated. Taste and add more seasonings if needed.
Sprinkle the grated Parmesan cheese and basil leaves over each serving.
Serve right away and enjoy!
