Ingredients:
150 g around 4.5 oz. pork butt or tenderloin, sliced
Marinating
3 tablespoons water or chicken stock
1 teaspoon cornstarch
½ tablespoon cooking wine
1 teaspoon sesame oil
1 tablespoon light soy sauce
¼ teaspoon salt
¼ teaspoon white pepper
stir-frying
1 teaspoon minced ginger
4 scallions, cut into small sections
cooking oil as needed
3 fresh red chilli peppers, cut into small sections
1 black bean sauce or 1 tablespoon chopped black beans
a very small pinch of salt if needed
1 teaspoon dark soy sauce
1 garlic clove, minced
2 fresh green chilli peppers, cut into small sections
Directions:
Slice the pork into thin pieces.
Season the pork slices with light soy sauce, cooking wine, chicken stock, salt, and pepper. Rub until well coated. Marinate the pork slices for about 10 minutes.
Sprinkle cornstarch over the pork, then toss until well coated again.
Drizzle about 1 tsp of sesame oil and toss until well coated.
Place a wok on the stove and turn the heat to medium.
Add about 3-cm of cooking oil and allow it to become hot.
Add the pork slices and cook for about 10 seconds. Remove from the wok onto a clean plate.
Remove the oil and leave about 1 tbsp.
Add the ginger, garlic, and scallions. Sauté until fragrant.
Put the pork back to the wok as well as the beans sauce and dark soy sauce. Stir and cook until done. This usually takes less than a minute.
