These delicious treats will always have a special place in my heart! I learned this recipe when I was in college and I’ve been making it ever since. A very easy dish that I am sure you can pull off! Try it now. Enjoy!
Ingredients:
for the sauce
3 tablespoons unsalted butter
3 tablespoons flour
1.5 c chicken broth
8 ounces sour cream
1 poblano pepper or sub can of diced green chiles, drained
for the filling
2 c shredded chicken
2.5 c Monterrey jack cheese
½ c onion diced
8 corn tortillas
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place the oven rack in the middle of the oven, then place the whole poblano on it. Roast for about 20 minutes.
Place a large skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the flour and whisk until well mixed.
Add the chicken broth and whisk until well mixed. Let it simmer for about 5 minutes or until the texture becomes thick.
Meanwhile, add chicken, onion slices, and 1 cup of cheese into a mixing bowl. Stir until well combined.
Remove the poblano from the oven, then discard the seeds. Place the poblano into a food processor as well as the sour cream. Pulse until well mixed.
Transfer the sour cream mixture into the chicken mixture, then beat until well mixed. Remove from the heat.
To Assemble:
Add 1 cup of the poblano mixture into a 9×13-inch baking dish and spread it evenly.
Fill each tortilla with ¼ cup of the filling. Roll and place it into the prepared baking dish. Repeat the process with the rest of the tortillas and filling.
Spread the remaining poblano mixture on top of the tortillas, then sprinkle a generous amount of cheese.
Place them inside the preheated oven and bake for about 25 minutes or until the cheese has melted completely.
Remove from the oven and allow it to cool for a few minutes.
Serve warm and enjoy!
Notes:
Before you start assembling, make sure that the tortillas are warm. Wrap them with paper towels, then place them inside the microwave and heat for 30 seconds.
