I just found the best rice recipe! All this time, I thought that fried rice is the best thing in the world, but I was wrong. At least until I tasted this Pineapple-lime rice! It is not your typical fried rice where you sauté’ everything. This recipe is more flavorful than fried rice. After all, all the flavours will be absorbed by the rice because you cook it all at once. This is perfect to go with fried chicken or fish. I even eat barbecue with this. It’s amazing! I have listed all the ingredients and steps so all you need to do is to follow them step by step and you are good to go! They will guide you to perfection. Ingredients:
1 cup uncooked long-grain rice
½ cup pineapple juice
1 cup of water
½ cup crushed pineapple
2 teaspoons butter
½ teaspoon grated lime zest
¼ teaspoon salt
¼ cup minced fresh cilantro
¼ cup chopped green onions
2 tablespoons lime juice
Directions:
Step 1: Place a saucepan on the stove.
Step 2: Add the rice, water, pineapple juice, lime zest, butter, and salt. Turn the heat to high and allow it to boil.
Step 3: Cover and reduce to medium-low heat. Simmer for 20 to 25 minutes or until the rice is tender and has incorporated all of the liquid.
Step 4: Remove the cover and add lime juice, green onions, and cilantro. Stir until well combined.
Step 5: Remove from the heat.
Step 6: Serve hot and enjoy!
