Ingredients:
1 tbsp olive oil
1 lb shrimp, peeled, deveined
¼ tsp salt
¼ tsp red pepper flakes
1 tbsp olive oil
8 oz white mushrooms, sliced
3 cloves garlic, minced
¼ tsp salt
½ c basil pesto
½ c chicken broth
1 tbsp fresh basil, chopped
Directions:
Place a large skillet on the stove and medium-high.
Add olive oil and allow it to become hot.
Season the shrimp with red pepper flakes and salt.
Add the shrimp into the skillet and sear each side for 3 minutes or until done.
Remove the shrimp from the skillet right away to avoid overcooking.
In the same skillet, add more olive oil and allow it to become hot.
Add the mushrooms and sauté until soft.
Add the garlic and salt, then sauté until aromatic.
Put the shrimp back to the skillet as well as ½ cup of chicken broth and ½ cup basil pesto. Stir until well combined.
Remove the skillet from the heat.
Garnish each serving with freshly chopped basil.
