Ingredients:
Chicken:
12 Green beans
1 tsp Light Soy Sauce
1 tsp Chili Paste or Sambal Olek
400 grams/14 ounces of Chicken Mince
1 c Jasmine rice
1 tsp Minced ginger paste
1 tsp crushed garlic
Optional: Dried shallots and fresh spring onions to garnish
1 tsp Onion salt
Satay Curry Sauce:
¾ c light coconut milk
1 tbsp Penang Curry Paste
2 tbsp sugar-free crunchy peanut butter
½ tsp Ginger, finely grated
½ tbsp Chili Paste or Sambal Olek
1 tsp Light Soy Sauce
1 garlic clove, crushed
1 tsp Raw honey or granulated sweetener that measures like sugar
1 tsp fresh lime juice
Directions:
Refer to the directions provided on the package of the rice on how to cook it. Cook the rice in the rice cooker.
Place a saucepan with water on the stove and turn the heat to high. Bring the water to a boil.
In a mixing bowl, add ginger, onion, salt, chicken mince, soy sauce, chili, and garlic. Use your hands to mix everything until well incorporated.
Shape 12 meatballs out of the meat mixture. Depends on the size you prefer.
Place a large non-stick pan on the stove and turn the heat to medium.
Add the meatballs into the hot pan, then cook them for 10 minutes or until brown on all sides.
Place a pan on the stove, then add ginger, garlic, and chili paste. Stir and cook for about a minute or until aromatic.
Pour in the coconut milk, then stir until well blended. Simmer the mixture for another minute.
Add the peanut butter, then stir until melted and well blended.
Add light soy, honey, lime juice, curry paste, and a pinch of salt. Stir until well blended.
Remove the pan from the stove.
Cook the beans for 3 to 4 minutes in boiling water. Drain.
Add rice onto a serving plate. Add meatballs and curry sauce on top. Garnish with spring onions, dried shallots, beans, and a slice of lime. a
