Ingredients:
2 slices of bacon, chopped
½ teaspoon black pepper, divided
1 garlic clove, minced
⅓ c onion, chopped, (from ½ small onion)
4 tablespoons olive oil, divided
1 ½ teaspoons sea salt, divided
1 ½-pound pork tenderloin, silver skin removed
¼ c fresh parsley, chopped, plus more to garnish
6 ounces brown mushrooms, thinly sliced
Directions:
For the Stuffing:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large oven-proof skillet on the stove and turn the heat to medium.
Add 2 tablespoons of oil and allow it to become hot.
Add the chopped bacon into the hot skillet, then cook for a few minutes until crispy and brown.
Add the onions and mushrooms, then saute for about 5 minutes or until soft.
Add ¼ tsp black pepper, ½ tsp salt, minced garlic, and chopped parsley. Saute for about a minute or until the garlic is aromatic. Transfer the mixture onto a plate.
To Stuff the Pork Tenderloin:
Create a pocket-like slice in the middle of the pork tenderloin.
Wrap each chicken with plastic, then use a meat mallet to gently pound it to about ½-inch thick.
Spread the mushroom mixture over the prepared tenderloin. Roll it up and seal with about 6 toothpicks.
Sprinkle ¼ tsp pepper and ½ tsp of salt all over the meat to season.
In the same skillet, add 2 tbsp of oil and allow it to become hot over medium heat.
Add the pork tenderloin into the hot skillet, then sear side for about 2 minutes or until brown.
Remove the skillet from the oven and transfer it to the preheated oven. Bake the pork tenderloin for about 18 to 20 minutes.
Remove from the oven and transfer the pork tenderloin onto a chopping board.
Brush the tenderloin with the drippings from the skillet and let it rest for a few minutes at room temperature to incorporate all the flavors.
