Ingredients:
4 tablespoons olive oil, divided
2 tablespoons Dijon mustard (or whole grain mustard), divided
1 pound of baby Yukon gold potatoes
1 pound sirloin, cut into 1-inch pieces
Steak sauce, for serving (optional)
2 tablespoons chopped rosemary, divided
Directions:
Prepare the grill and preheat to medium-high.
Let the skewer soak for 20 minutes in water. (Water will help the skewers not to burn while grilling.)
Drizzle 2 tablespoons of olive oil, then sprinkle 1 tablespoon of rosemary, salt, and pepper over the steak. Toss until well coated. Let the steak rest for a few minutes while you prepare the other ingredients.
In a heat-proof bowl, add the potatoes. Cover with foil.
Place the bowl inside the microwave and heat the potatoes for about 6 to 8 minutes or until fork-tender. Remove from the microwave and allow the potatoes to cool completely.
Add mustard, 2 tablespoons of olive oil, salt, pepper, and 1 tablespoon of rosemary over the potatoes. Toss until well coated.
Remove skewers from the water, then thread the steak and potatoes.
Place them over the preheated grill, then cook for about 8 minutes. Make sure to flip them over to evenly cook all sides.
Transfer onto a clean plate.
Serve right away. Enjoy!
