Take that plain spinach to the next level with this amazing recipe! These Spinach Stuffed Shells will find a way to turn your dull day into a happy one! Packed with delicious flavors, these delicious treats are perfect to eat pretty much any time of the day. Enjoy!
Ingredients:
1 tbsp chopped fresh basil (or 1 tsp dried basil)
1 (12 oz) package of jumbo pasta shells
½ tsp garlic powder
¼ c grated Parmesan cheese
1 Egg
2 (10 oz.) packages of frozen chopped spinach, thawed
½ tsp salt
1 (24 oz) jar marinara sauce (about 2 ½ c total)
15 oz. ricotta cheese
2 c shredded mozzarella cheese, divided
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch baking dish.
Add ½ of the marinara sauce into the prepared baking dish and spread it evenly.
Refer to the directions provided on the package of the pasta on how to cook it.
Drain and rinse the cooked pasta with cold water to stop the cooking process. Set aside.
Wrap the spinach with a towel, then squeeze it to remove excess water. Put the spinach into a mixing bowl.
Add salt, Parmesan cheese, 1 ½ cups of mozzarella, basil, egg, and garlic powder into the bowl with the spinach. Stir everything until well combined.
Stuff the prepared shells with the spinach mixture.
Arrange the stuffed shells into the prepared baking dish.
Pour the rest of the sauce on top of the stuffed shells and spread it evenly. Make sure to coat them well with the sauce.
Sprinkle the rest of the mozzarella cheese on top stuffed shells.
Cover the baking dish with aluminium foil.
Place the baking dish inside the preheated oven and bake for 30 minutes.
Remove the foil cover and bake for 10 minutes more or until the cheese turns golden brown.

Note:
Feel free to add ground Italian sausage or ½ lb of cooked ground beef into the marinara sauce if you prefer.
