This Spinach Cheese Manicotti is the perfect food for all our vegetarian friends out there! It is incredibly comforting, easy & quick to throw together, and one of the best veggie meals I’ve made! Manicotti shells stuffed with delicious creamy & rich spinach and cheese mixture smothered in spaghetti sauce, then baked to perfection. I am sure even your pickiest eaters will love everything about this dish! For a simple, family-friendly meal, serve this Spinach Cheese Manicotti with some garlic knots or garlic bread.
Ingredients
1 egg
1 (15 oz.) container of ricotta cheese
½ c. minced onion
2 tsp minced fresh parsley
¼ tsp garlic powder
½ tsp pepper
½ c. grated Parmesan cheese, divided
1 ½ c. shredded mozzarella cheese, divided
2 (26 oz.) jars of spaghetti sauce
1 (8 oz.) package of manicotti shells
1 (10 oz.) package of frozen chopped spinach, thawed and squeezed dry
1 ½ c. water
How to make Spinach Cheese Manicotti
Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.
Step 2: Place the ricotta, spinach, onion, and egg in a small bowl. Mix well and season with parsley, pepper, and garlic powder. Next, mix in 1 c. mozzarella along with ¼ c. Parmesan.
Step 3: Combine the spaghetti sauce and water in another bowl.
Step 4: In the bottom of a 9 x 13-inch baking dish, spread 1 c. of the sauce. In the meantime, stuff the uncooked manicotti shells with ricotta mixture. In the prepared dish, arrange the stuffed manicotti shells in a single layer. Pour the rest of the sauce on top and sprinkle with the rest of the mozzarella and Parmesan.
Step 5: Place in the preheated oven and bake for about 45 to 55 minutes or until the noodles are tender.
Tip:
You can prep and assemble this dish the night before. The next day, take it out of the fridge thirty minutes before baking.
