I love this Sicilian Meatloaf so much! It is something you can serve on any occasion! Whether you are having guests over or just a simple family dinner, this dish is perfect for anything! When served over pasta and topped with marinara sauce, it is a totally complete meal!
Ingredients:
2 Eggs
1 red bell pepper, finely chopped
½ teaspoon pepper
1 ¼ c either shredded mozzarella cheese
1 small red onion, finely chopped
2 tablespoons tomato paste
½ c Parmesan cheese
1 tablespoon olive oil
about ¼-pound deli ham
1 teaspoon salt
2 pounds of ground beef
2 cloves garlic, minced
marinara sauce
12-15 large basil leaves
¾ c Italian-style breadcrumbs
2 tablespoons parsley, chopped
cooked pasta or zucchini noodles, if desired
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium. Add olive oil and allow it to become hot. Add the red bell pepper and onion, then sauté for a few minutes until soft and translucent.
Add the garlic, then sauté for a minute or until aromatic.
Remove the skillet from the flame and let the veggies cool. Transfer them into a large mixing bowl.
Add breadcrumbs, eggs, Parmesan cheese, parsley, salt, tomato paste, ground beef, and pepper into the bowl with the veggies. Mix everything until well combined.
Lay parchment paper onto a flat surface, then spoon the mixture into the middle and shape it into an 8×5-inch rectangle.
Leave a space on the sides.
Add a layer of ham, cheese, and basil on top of the mixture. Roll and seal.
Cover the inside of a baking sheet with parchment paper.
Place the meatloaf onto the prepared baking sheet. Place it in the preheated oven and bake for about an hour.
Remove the meatloaf from the oven and let it rest for 10 minutes. Slice into even servings.
Serve over pasta and marinara sauce. Enjoy!
