Ingredients:
3 tablespoons olive oil
1 ½ c vegetable broth
3 tablespoons lemon juice
3 garlic cloves, minced
2 pounds fingerling potatoes any variety
½ teaspoon pepper
1 tablespoon dried oregano
½ teaspoon salt or to taste
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Wash the potatoes with water to remove any dirt.
Slice the potatoes lengthwise, then put them onto a 12×17-inches non-stick baking sheet. Arrange them in a single layer.
Drizzle olive oil over the potatoes and sprinkle salt and pepper to season. Rub each potato until well coated.
Place the potatoes inside the preheated oven and bake for about 15 minutes or until fork-tender.
In a mixing bowl, add garlic, oregano, lemon juice, and vegetable broth. Stir until well blended.
Pour the broth mixture over the potatoes. Put them back inside the oven and bake for another 20 to 25 minutes or until done.
Remove the potatoes from the oven, then flip them. Broil for about 5 minutes or until they turn golden brown.
Remove from the oven, then sprinkle fresh parsley on top to garnish.
