Ingredients:
1 lb. shrimp, large, peeled, deveined
1 tbsp olive oil
¼ tsp salt
8 ounces spiral pasta
½ c basil pesto
½ c chicken broth
1 tbsp olive oil
¼ tsp red pepper flakes
chopped fresh basil
8 oz. white mushrooms, sliced
¼ tsp salt
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add olive oil and allow it to become hot.
Add the shrimp into the hot skillet, then cook for about 3 minutes or until all sides turn pink. Season with ¼ tsp of red pepper flakes, and ¼ tsp of salt to taste.
Remove the shrimp from the skillet and transfer them onto a clean plate.
In the same skillet, add 1 tbsp of olive oil and allow it to become hot.
Add the mushroom slices and ¼ tsp of salt. Saute for a few minutes until soft.
Put the shrimp back into the skillet together with ½ cup of chicken broth and ½ cup of basil pesto. Stir everything until well incorporated. Remove the skillet from the stove.
Refer to the directions provided on the pasta package on how to cook it. Drain and rinse with cold water to stop the cooking process.
Spoon the sauce over the cooked pasta, then toss until well coated.
Sprinkle freshly chopped parsley on top to garnish
Serve right away. Enjoy!
