Ingredients:
FOR THE CHICKEN:
¼ c flour
1 ½ teaspoon salt
½ c cornstarch
1 Egg
2 tablespoons oil, divided, plus more for frying
A pinch of black pepper
2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
FOR THE SAUCE:
Orange zest
10 tbsp white vinegar
1 tbsp corn starch
3 tbsp soy sauce
10 tbsp sugar
1 tsp sesame oil
2 tbsp rice wine
¼ c water
TO FINISH:
½ teaspoon hot red chili pepper crushed
2 tsp garlic, minced
1 ½ tbsp ginger root minced
Directions:
In a bowl, add water, 1 tbsp cornstarch, sesame oil, rice wine, orange zest, soy sauce, sugar, and white vinegar. Stir everything until well blended.
In another mixing bowl, add egg, pepper, 1 tbsp oil, and salt. Whisk until well blended.
In a separate bowl, add flour and ½ cup of cornstarch. Whisk until well blended.
Place a large pan on the stove and turn the heat to medium-high.
Coat each chicken with the egg mixture and flour mixture. Shake off any excess flour.
Add the chicken into the hot pan, then cook each side for about 4 minutes or until they turn golden brown.
Transfer the chicken onto a clean plate lined with paper towels to drain excess oil. Repeat the process with the rest of the chicken.
Leave 1 tbsp of oil from the pan, then remove the rest.
Add the garlic, crushed red peppers, and ginger. Sauté for a few minutes until aromatic.
Add the orange juice, then stir until well blended. Let the mixture boil.
Remove the pan from the heat, then add the chicken back. Toss until well coated with the delicious sauce.
