Ingredients
2 lbs Chicken Thighs, Bone in and skin on
6 Slices Bacon, Diced
1 c. All-purpose Flour
2 tsp Onion Powder
2 tsp Garlic Powder
1 tsp Paprika
1 Stick Butter, Divided
½ tsp Italian Seasoning
3 ½ c. Chicken Broth
1 c. Milk
1 tsp Salt
½ tsp Pepper
How to make One Pan Smothered Chicken
Step 1: In a large skillet, cook the diced bacon over medium-high heat until completely cooked. To a paper towel-lined plate, transfer the bacon and set aside.
Step 2: In the meantime, place the flour, garlic powder, onion powder, paprika, salt, pepper, and Italian seasoning in a shallow bowl or dish. Mix well until combined.
Step 3: Using paper towels, pat dry the chicken thighs. Into the seasoned flour, dredge all sides of the chicken until well coated. Shake the excess flour off and keep the flour mixture aside for later.
Step 4: In the now-empty pan, melt half of the butter. Then, place the coated chicken into the pan and sear for about 4 to 5 minutes on each side until golden brown. To a plate, transfer the chicken and set aside.
Step 5: Into the same pan, add the rest of the butter and let it melt. Once the butter has melted, sprinkle 1 c of the rest of the seasoned flour. Stir and cook for about a minute until everything is well incorporated.
Step 6: Into the pan, slowly stir in the chicken broth and milk until you have a smooth gravy.
Step 7: Place the cooked chicken back into the pan along with the bacon. Bring everything to a boil. Once boiling, adjust the heat to low and simmer for about 20 minutes or until the chicken is completely cooked.
