Lemon curd, marshmallow fluff, and whipped topping in crisp pie crust cannoli shells.
These treats are great for lemon meringue pie lovers who don’t want to make or slice one. Each bite has the crispy texture of a flaky pie crust, an acidic lemon taste, and sweet marshmallows and cream. These party sweets are separately proportioned. After baking, pipe the lemon meringue pie filling into the pie crust cannoli shells. If you wish to add taste and color contrast to the pale yellow filling, sprinkle on some lemon zest.
Ingredients
1 egg
1 box (14.1 ounces) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on the box
½ c. marshmallow fluff
1 tsp water
¾ c. lemon curd
Optional, 1 teaspoon of lemon zest
1 c. frozen whipped topping, thawed
How to make Lemon Meringue Pie Cannoli
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using a non-stick baking spray, grease 8 cannoli forms.
Step 2: Cut the unrolled pie dough into four 4 ½ inches circles from each crust.
Step 3: For the egg wash, mix the egg and water. Around each cannoli form, wrap one pie dough circle, sealing the edges using the egg wash. Place on a parchment paper lined baking sheet. Put in the freezer for 10 minutes.
Step 4: Take out of the freezer and bake in the preheated oven for about 10 to 12 minutes or until a little golden brown. Once done, allow the cannoli to cool for about 10 minutes before taking them out from the cannoli forms, and letting them cool fully.
Step 5: Mix the lemon curd with marshmallow fluff. Then, beat in the whipped topping. Into a zip-top bag or disposable pastry, pour the mixture.
Step 6: Snip the tip of the pastry bag. Into the pie crust cannoli shells, pipe the pie filling.
Step 7: At the ends of the cannoli, sprinkle the lemon zest.
