This dish is perfect to go with pretty much anything! Enjoy this comfort food in just about an hour! Lunch or dinner will be awesome with this Italian Sausage and Peppers. Enjoy!
Ingredients:
1 green bell pepper, sliced
1 14.5-ounces can of diced tomatoes
2 tbsp chopped fresh parsley
½ tsp salt
½ tsp ground black pepper
5 cloves garlic, minced
1 tsp dried oregano
½ tsp dried thyme
2 large basil leaves, chopped
¼ c tomato paste (4 tablespoons)
20 ounces sweet Italian sausages, (5 sausages)
¼ c olive oil
1 large onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ c red wine, on the drier side
Directions:
Put a large pan on the stove and turn the heat to medium.
Arrange the sausages into the pan, then cook for a few minutes until they turn brown. Transfer them to a clean plate.
Add olive oil to the same pan.
Add the peppers and onion slices, then sauté for a few minutes until soft.
Add garlic, salt, and pepper, then sauté for a minute or until aromatic.
Add the tomato paste, then cook for a minute and stir everything until well blended.
Add the wine, then scrape the bottom of the pan to get the browned bits. Stir again until well blended and simmer for about 3 minutes.
Stir in thyme, parsley, tomatoes, and oregano.
Slice the sausages into 5 cuts, then add them into the pan and toss until well incorporated.
Cover the pan with the lid and cook for 20 to 30 minutes. Stir in the basil leaves.
Serve over pasta. Enjoy!
Notes:
I suggest using Cabernet Sauvignon, Merlot, Pinot Noir, or red wine for this recipe.
