Ingredients:
1 tbsp lemon juice
Salt and fresh cracked pepper
4 pork chops, boneless
¼ c honey
2 tbsp butter, divided
⅓ c whole grain mustard
1 pound (450g) baby yellow potatoes, quartered and rinsed
1 tsp smoked paprika
Chopped fresh parsley, for garnish
2 tbsp oil, divided
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the potatoes to the boiling water, then cook for 8 minutes until fork-tender. Drain and set aside.
Use paper towels to pat dry the pork chops. Season all sides with salt and pepper.
In a bowl, add paprika, lemon juice, honey, and mustard. Stir everything until well blended.
Place a large skillet on the stove and turn the heat to medium. Add 1 tbsp of butter and 1 tbsp of oil.
Add the potatoes into the hot skillet, then cook for a few minutes until golden brown. Move them to a clean plate.
Add more butter and oil to the same skillet. Add the pork chops, then sear each side for about 5 minutes or until they turn brown. Move them to a clean plate as well.
In the same skillet over low heat, add the honey mustard sauce and scrape the bottom to get the browned bits. Give it a good stir and simmer for a few minutes just until the consistency is thick.
Bring the potatoes and pork chops back into the skillet, then toss until well coated with the sauce. Remove from the heat.
Sprinkle freshly chopped parsley on top to garnish.
