Ingredients:
2 tablespoons olive oil, divided
4 medium boneless, skinless chicken breasts 4 ounces each
1 teaspoon ground mustard seed
½ teaspoon kosher salt
⅛ teaspoon ground pepper
1 teaspoon paprika
¼ teaspoon cayenne pepper or to taste
Mustard sauce:
1 teaspoon white vinegar
1 teaspoon sriracha sauce or to taste
¼ c honey
1 tablespoon whole grain mustard
3 tablespoons chicken stock
a small handful of fresh thyme to garnish
2 tablespoons Dijon mustard
Directions:
In a mixing bowl, add all the ingredients for the rub. Whisk everything until well incorporated.
Sprinkle the mixture over the chicken breasts, then rub each until well coated.
In a mixing bowl, add all the ingredients for the mustard sauce. Stir everything until well blended.
Place a non-stick pan on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the chicken breasts into the hot pan and sear each side for about 2 minutes or until they turn golden brown.
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place the seared chicken breasts into an oven-proof baking dish.
Pour the mustard sauce over the chicken breasts and spread it evenly.
Place the baking dish in the preheated oven and bake the chicken breasts for about 15 to 25 minutes or until done.
Remove from the oven and allow the chicken breasts to rest for a few minutes to incorporate all the flavors.

Notes:
Feel free to use boneless chicken thighs for this recipe instead of chicken breasts. Salmon is a great alternative as well.
You can use vegetable stock, water, or chicken stock for this recipe.
