Ingredients:
2 c Beef Broth
2 teaspoons Fresh Thyme Leaves to garnish
2 tablespoons Olive Oil
1 Large Carrot or two small-medium, cut into 2-inch chunks
4 Garlic Cloves, minced
¼ c Tomato Paste
1 tablespoon Worcestershire Sauce
2 tablespoons Gluten-free All-Purpose Flour or Whole Wheat for non-gluten
2 pounds of Beef Chuck Roast cut into 2-inch chunks; excess fat removed
2 Yukon Gold Potatoes, diced into 2-inch pieces
½ Yellow Onion, Chopped Large
1 Bay Leaves
½ teaspoon Coarsely Ground Black Pepper
1 Tsp Kosher Salt
Directions:
Prepare the oven and preheat to 160 degrees C or 325 degrees F.
Sprinkle salt and pepper over the beef chunks, then toss until well-coated.
Coat the beef chunks with flour and shake off any excess.
Place a Dutch oven on the stove and turn the heat to medium-high. Add olive oil and allow it to become hot.
Add the beef chunks into the hot pot, then sear each side for about 4 minutes or until they turn brown.
Remove the chunks from the pot and transfer them onto a clean plate. Cover the meat with something to keep them warm.
In the same Dutch oven, add carrots, onions, and garlic. Sauté the veggies for a few minutes until soft and aromatic.
Add bay leaf, tomato paste, potatoes, beef broth, Worcestershire sauce, and thyme. Stir everything until well incorporated.
Make sure to scrape the bottom of the Dutch oven to get the browned bits. Simmer for a few minutes.
Cover the Dutch oven with the lid, then remove it from the stove.
Transfer the Dutch oven to the preheated oven and cook everything for about 2 hours or until the beef chunks are fork-tender. Taste and add more seasonings if needed.
