In less than 30 minutes, this Ground Beef Stuffed Pepper Skillet is ready to be served! Perfect for a simple lunch or dinner with your constants! Ingredients:
½ c red bell pepper
¾ c white rice, I use Jasmine
½ onion, diced
2 tablespoons tomato paste
2 c beef broth
1 pound of ground beef
14.5 ounces diced tomatoes
¼ teaspoon black pepper
1 ½ c cheese
½ teaspoon salt
3 cloves garlic, minced
1 tablespoon parsley
1 teaspoon Italian seasoning
½ c green bell pepper
Directions:
Place a skillet on the stove and turn the heat to medium.
Add the ground beef into the skillet, then cook for a few minutes until crumbly and brown.
Add the garlic and onion, then sauté for a few minutes until aromatic and soft.
Add beef broth, tomato slices, rice, tomato paste, Italian seasoning, and bell peppers. Stir everything until well incorporated. Let the mixture boil.
Once boiling, turn the heat down to low and simmer the mixture for about 18 minutes to cook the rice.
Use a fork to fluff the rice, then sprinkle shredded cheese on top.
Cover the skillet with the lid and allow the cheese to melt completely.
Sprinkle freshly chopped parsley on top to garnish.
Serve right away. Enjoy!
Notes:
It is important to let the mixture boil first before turning it down to heat to simmer.
Feel free to use any color of bell pepper for this recipe.
You can use ground chicken or ground turkey for this recipe if you prefer.
