Ingredients:
3 spring onions, thinly sliced, white and green parts divided
3 large Eggs
1 tablespoon peeled and crushed ginger (from a 2.5cm piece)
3 cloves garlic, crushed
115 g frozen peas
800 g cooked long grain rice (preferably leftover)
3 tablespoons low-sodium soy sauce
2 carrots, diced
3 tablespoons sesame oil

Directions:
Place a large cast-iron skillet on the stove and turn the heat to high.
Add 1 tbsp of oil and allow it to become hot.
In a mixing bowl, add 2 tsp of water, egg, and salt. Beat until well blended.
Add the beaten eggs into the hot pan, then cook for 30 seconds until it forms into soft curds. Move onto a clean plate.
In the empty pan, add 2 tbsp of oil and allow it to become hot.
Add the onions and carrots, then sauté until a bit caramelized.
Add the ginger and garlic, then sauté until aromatic.
Add the peas, cooked eggs, and rice. Stir until well combined.
Add the soy sauce, then stir until well mixed. Sprinkle salt and pepper to season.
Add the rest of the spring onions, then stir until well mixed.
