These fresh apple oatmeal cookies are one of my favorites! They are chewy, but slightly crisp on the edges and incredibly delicious! The perfect treat for anyone who loves cinnamon and apples!
Ingredients
1 and ¾ c. old-fashioned rolled oats
½ c. unsalted butter, softened
1 c. all-purpose flour
¼ tsp ground nutmeg
1 tsp ground cinnamon
½ tsp baking soda
½ c. light brown sugar, packed
¼ c. granulated sugar
1 tsp pure vanilla extract
1 large egg at room temperature
1 c. chopped apple
¼ tsp salt
HOW TO MAKE FRESH APPLE OATMEAL COOKIES
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using parchment paper, line two large baking sheets.
Step 2: In a large mixing bowl, mix the flour, cinnamon, nutmeg, baking soda, and salt until well combined. Then, whisk in the old-fashioned rolled oats. Set aside.
Step 3: In a mixer, blend the butter, brown sugar, and granulated sugar for about 1 to 2 minutes until well blended. Stir in the egg and vanilla extract. To the wet ingredients, add the dry ingredients and beat until just mixed. Next, gently fold in the chopped apple.
Step 4: Using a tablespoon cooking scoop, scoop the cookie dough and place them on the prepared baking sheets. Place in the preheated oven and bake for about 12 to 15 minutes or until the top of the cookies is set.
Step 5: Take the cookies out of the oven when done and let them cool for about 5 to 10 minutes. Then, transfer the cookies to a wire rack to cool fully.
Tips and variation:
In an airtight container, keep the cookies and store them for up to 2 to 3 days.
If desired, you can swap nutmeg with ¼ tsp ground cinnamon.
Before using, make sure to let the eggs come to room temperature.
For this recipe, you are welcome to use any variety of baking apples.
