Ingredients:
3 cans of evaporated milk (12 oz. each)
2 packets ranch seasoning mix (the total amount you need is 2 ounces)
8 ounces cream cheese – softened and cubed
1 ½ c sharp cheddar cheese (shredded)
3 oz. chopped bacon bits
3 c chopped cooked chicken (about 1 rotisserie chicken if you prefer)
2 cloves garlic – minced
1 ½ c mozzarella cheese (shredded)
9 sheets lasagna – you can make a few extra if you want to in case of some tear.
1 small onion – finely diced
¼ teaspoon fresh ground black pepper
chopped green onions or fresh parsley for garnishing
1 tablespoon Olive Oil
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch baking pan.
Refer to the directions provided on the package of the lasagna noodles on how to cook them. Drain. Grate the cheeses.
For the Sauce:
Place a saucepan on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the onion, then sauté for about 3 minutes or until translucent.
Add the garlic, then sauté for a minute or until aromatic.
Turn the heat down to low, then add ranch seasoning, pepper, and evaporated milk. Stir until well blended and simmer for about 5 minutes or until the texture of the sauce becomes thick.
Add the cubes of cream cheese, then stir until well blended.
To Assemble:
Add ¾ cup of the white sauce into the baking pan and spread it evenly.
Add the lasagna noodles on top of the sauce.
Scatter ½ of the chicken on top of the lasagna noodles.
Sprinkle ½ cup of cheddar and mozzarella cheese over the chicken. Spread 1 cup of the sauce on top of the cheese. Repeat the process with the rest of the ingredients until everything is arranged in layers ending with the bacon.
Cover the pan with foil and place it inside the preheated oven. Bake for about 20 minutes.
Remove the foil cover and bake for 10 more minutes.
Remove from the oven and allow it to cool for at least 10 minutes at room temperature.

Place any leftovers in an airtight container, then place them inside the fridge. They can last for a few days or 2 months in the freezer.
