This is the perfect chicken recipe! Tender and juicy chicken on a bed of spinach leaves topped with a delightful creamy white sauce. This Chicken Florentine is seriously delicious!
Ingredients
6 tablespoons ¾ stick unsalted butter, divided
4 boneless, skinless chicken breasts
½ c. all-purpose flour, for dredging
2 tablespoons onion, finely diced
1 ½ c. dry white wine
1 tablespoon finely chopped garlic
1 c. heavy whipping cream
1 tablespoon chopped fresh parsley
2 10-oz. packages of frozen cut-leaf spinach, thawed, drained
Salt and freshly ground black pepper to taste
How to make Chicken Florentine
Step 1: Begin by seasoning the chicken with salt and pepper. In the flour, dredge the chicken and lightly coat. Then, shake any excess flour off.
Step 2: Melt 2 tbsp butter in a large skillet over medium heat. Add the chicken once the butter has melted and sear for about 5 minutes on each side until brown.
Step 3: To a plate, transfer the chicken and tent with foil to keep the chicken warm.
Step 4: In the same skillet, melt another 2 tbsp of butter over medium heat. Cleaning the skillet is not required. Saute the onions and garlic for about 1 minute until the onions are translucent. Using a wooden spoon or spatula, stir and scrape any brown bits on the bottom of the skillet.
Step 5: Take the pan off the heat and pour in the wine. Place the pan back on the stove. Let everything boil for about 3 minutes over medium-high heat until the liquid has reduced by half.
Step 6: Next, add the cream and bring the mixture to a boil. Let it cook for another 3 minutes until the sauce has reduced by half, stirring occasionally. Then, stir in the parsley.
Step 7: To taste, season the sauce with salt and pepper.
Step 8: Into the pan, place the chicken back and any accumulated juices. Then, adjust the heat to low/warming.
Step 9: In another large skillet, melt the rest of the 2 tbsp butter over medium heat. Once melted, add the spinach and cook until completely heated. To taste, season with salt and pepper.
Step 10: Over a plate, arrange the spinach and top with the chicken. Then, pour over the sauce. Serve right away. Enjoy!
