If you want the perfect side dish to serve today, then you need to try this recipe! This Cheesy Scalloped Zucchini is a combination of sauteed veggies and a creamy sauce. It is simply the best! In less than an hour, you will surely enjoy this dish!
Ingredients:
1 tbsp flour
3 tbsp butter, divided
1 c Monterey jack cheese, shredded
2 cloves garlic, minced
1 c half & half cream
½ sweet onion, sliced
4 zucchini or summer squash
½ c Parmesan Cheese, grated, divided
Fresh cracked pepper
¼ tsp salt
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place an oven-proof skillet on the stove and turn the heat to medium. Add 2 tbsp of butter and allow it to melt.
Add the onions into the hot skillet, then sauté for a few minutes until soft.
Add the zucchini and sauté for a few more minutes until soft as well.
Add the garlic and sauté for a minute or until aromatic. Add salt and pepper to taste.
Transfer the mixture to a 9×9-inch casserole dish and spread it evenly.
In the same empty skillet, add the rest of the butter and allow it to melt.
Add flour, then whisk and cook for about a minute just until brown.
Add the cream and whisk until well blended. Allow the mixture to boil.
Turn the heat down to low and simmer the mixture for 2 more minutes or until the texture becomes thick.
Add about ¼ cup of Parmesan cheese and Monterey Jack cheese. Stir until completely melted.
Remove the skillet from the stove and sprinkle a bit of salt.
Put the sauteed veggies back into the skillet, then toss until well incorporated with the rest of the ingredients. Sprinkle cheese and pepper over the dish.
