Ingredients:
1 c + 3 tbsp cold Buttermilk
½ c very cold butter, equal to 1 stick
2 ½ c all-purpose flour
2 tsp honey
1 tsp salt
2 tbsp aluminium-free Baking Powder
Topping:
1 tbsp butter
2 tbsp honey
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
In a large mixing bowl, add salt, baking powder, and flour. Whisk everything until well blended.
Slice the cold butter into small pieces. Add them into the bowl with the flour mixture and beat until well blended.
Create a hole in the center of the dry mixture, then add honey and cold buttermilk to it. Stir everything until well combined.
Sprinkle flour onto a flat surface, then place the dough on it. Shape the dough into a 9-inch rectangle.
Fold the right and left sides of the dough towards the middle.
Rotate the dough horizontally, then flatten it out. Repeat the process two more times. Shape it into a 1-inch thick 10 x 7-inch rectangle.
Use a cookie cutter to slice the dough into 6 even circles.
Brush a 10-inch cast-iron skillet with butter.
Add the biscuits to the prepared skillet and arrange them in a single layer, leaving a small space between each biscuit.
Place the skillet inside the preheated oven and bake the biscuits for about 15 minutes or until they turn golden brown.
In a small bowl, add melted butter and honey. Stir until well blended.
Brush the biscuits with the butter-honey mixture, then bake for 5 more minutes.
Remove the biscuits from the oven and allow them to cool for a few minutes at room temperature.
