Ingredients:
4 oz. pepperoni
8 oz. ricotta
½ c sliced black olives
½ lb. Italian turkey sausage, casings removed
3 c (24 oz.) pizza sauce or marinara sauce
12 oz. pasta (gluten-free for gluten-free)
½ tsp oregano (optional)
½ c parmigiana Reggiano (Parmesan), grated
2 c mozzarella, shredded
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Place a large saucepan on the stove and turn the heat to medium.
Add the sausage and cook for 10 minutes or until brown.
Add the sauce, ¾ of pepperoni, and ¾ of the olives. Stir until well blended. Remove from the heat.
In a mixing bowl, add Parmesan, ricotta, and mozzarella cheese. Stir until well blended.
Add ½ of the pasta into a large baking dish and spread it evenly.
Add ½ of the sauce over the pasta and spread it evenly to cover the top.
Sprinkle ½ of the cheese mixture over the sauce. Repeat the process until everything is arranged in layers.
Sprinkle the rest of the pepperoni, olives, and oregano on top.
Cover the baking dish with aluminium foil.
Place it inside the preheated oven and bake for about 30 minutes.
Remove the foil cover and bake for another 10 minutes or until the top turns golden brown.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
