I love bread pudding, I think it is very easy to make, and the ingredients are inexpensive. This Pecan Pie Bread Pudding is something I never thought I needed until I heard the recipe. On the outside, it is crispy and crunchy, but on the inside, it’s creamy and smooth. The trick to this bread pudding is its consistency; when you take it out of the oven, you want it to be still just a little jiggly in the center. Everyone bakes together to produce the fine, custard-like consistency that you can dig in and enjoy from the oven or cold.
Ingredients:
(6) large eggs, beaten
1 c light Karo syrup
1 c heavy cream
½ c butter, melted
2 tsp vanilla extract
1 c sugar
¼ c dark rum or bourbon
8 c of cubed bread (See Note)
1 c chopped or halved pecans divided
For the rum sauce:
(1) stick butter
1 c sugar
¼ c dark rum or bourbon
¼ c of water (See Note)
Directions:
Add eggs and slightly beat in a large mixing bowl.
Add everything except the bread and pecans, and then mix until combine.
Fold in the bread and half of the pecans.
For an hour, let the mixture sit at room temperature. Mix until it coats the bread well, mixing often. Cover, refrigerate until it’s ready to bake. When left to sit for 6-8 hours or overnight, then this recipe is best. It gives plenty of time for the bread to soak up all.
Preheat oven 350 degrees. Then prepare a 9×13 baking dish with butter or cooking spray.
Add and pour everything into the prepared baking dish.
Add the remaining pecans on top.
Pop it in the oven, and then bake for 60 minutes.
For the Rum sauce: In a saucepan, add and melt a stick of butter while baking the bread.
Add sugar, dark rum or bourbon, and water, mix well and simmer for 10 minutes, stirring occasionally. Turn off the stove eye, and let it sit to keep it warm until the bread pudding is finish.
Then remove it from the pan.
Notes:
The bread used in this recipe does not have o be stale or toasted
For the rum sauce, if you want to use heavy rum or bourbon, then you have to omit the water and substitute it with the liquor you prefer.
