Ingredients:
For the Scones
1 tbsp baking powder
2 c all-purpose flour, plus a little extra for flouring your work surface
½ tsp salt
3 tbsp granulated sugar
1 c peaches, peeled and cut into ½” dice (approximately 1 ½ peach)
¾ c light cream
5 tbsp cold unsalted butter, cut into ¼-inch cubes
For the Glaze
2–3 tbsp light cream
¼ tsp vanilla
1 ½ c confectioner’s sugar
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with baking mat a large baking sheet.
Add baking powder, 2 cups flour, salt, and sugar into a large bowl. Whisk until well mixed.
Add the butter and stir with a fork until well mixed and crumbly.
Add the peaches and toss until well coated.
Add the light cream and stir everything until a soft dough forms.
Sprinkle flour on a flat surface, then place the dough on it.
Form the dough to a rectangular shape. Use a sharp knife to slice it into six even squares.
Slice each of the six squares into two to get 12 dough pieces.
Arrange the triangles onto the lined baking sheet.
Place it inside the preheated oven and bake the dough pieces for about 13 minutes or until they turn golden brown. Make sure to turn them halfway through the cooking time.
Remove from the oven and allow them to cool for a few minutes at room temperature.
For the Glaze:
Add 2 tbsp of light cream, vanilla extract, and confectioners’ sugar into a mixing bowl. Whisk until well mixed.
Brush each scone with the glaze. Let them rest for a few minutes.
