I will never get tired of recommending this recipe to my friends! It is just too perfect to keep to myself. Ingredients:
⅔ c white sugar, scant ⅔ cup
1 large Egg
1 large egg yolk
1 teaspoon vanilla
⅓ c butter, melted.
½ c all-purpose flour
1 teaspoon baking powder
6 tablespoons whole milk, at room temperature
6-7 fresh peaches
Directions:
Apply cooking spray in a 9-inch springform pan.
Prepare the oven and preheat to 180 degrees C or 355 degrees F.
Prepare the peaches, then peel and slice into medium cuts.
Put the butter into a microwavable bowl, then place it inside the microwave. Heat until melted completely.
Add baking powder and flour, then whisk until well blended.
Add eggs and sugar into a mixing bowl, then whisk until well combined.
Add vanilla and whisk until well mixed.
Add milk, flour, and baking powder. Beat until well mixed.
Add the slices of peaches and stir until just mixed.
Transfer the batter into the greased pan and spread it evenly.
Sprinkle a bit of sugar over the batter.
Place it inside the preheated oven and bake for about 50 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove the cake from the oven and allow it to cool at room temperature for a few minutes.
Serve warm and enjoy!
