I love this Peach Baked Oatmeal so much! Oh, man, you are so in for a treat! Give this recipe a try now and don’t forget to share it with your friends as well. Feel free to add more ingredients if you wish. I am sure that you can add a lot of things to this very basic recipe. Enjoy!
Ingredients:
2 c old fashioned rolled oats
2 ½ c unsweetened almond milk
1 tsp cinnamon
1 tsp vanilla
½ tsp almond extract
2 c ripe peaches, divided (1 cup chopped and 1 cup sliced)*
¼ c maple syrup
2 tbsp melted coconut oil or butter (optional)
pinch of sea salt
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: In a large mixing bowl, add the almond milk, 1 cup of chopped peaches, oats, cinnamon, coconut oil, maple syrup, vanilla, sea salt. Stir until well combined.
Step 3: Apply non-stick cooking spray in a square baking dish.
Step 4: Transfer the mixture into the prepared baking dish.
Step 5: Place the baking dish inside the preheated oven and bake for about 45 to 50 minutes.
Step 6: Remove from the oven and allow it to cool at room temperature for about 5 minutes.
Step 7: Fill a bowl with the baked oatmeal and put almond milk over.
Step 8: Serve and enjoy!
Notes:
Place any leftovers in an airtight container and put them inside the fridge. It can last up to 4 days.
Cover the baked oatmeal with aluminium foil when reheating in the oven for 20 minutes.
