Packed with outstanding flavors, this Pasta e Fagioli Soup is my ultimate comfort food! This recipe is super easy to prepare. You just have to follow these easy steps, and you are good to go. Enjoy!
Ingredients:
1 ½ c chopped yellow onion
2 14.5-ounce cans of low-sodium chicken broth
Finely shredded Romano or Parmesan cheese, for serving
3 cloves garlic, minced (1 tablespoon)
½ teaspoon dried marjoram
1 (15 ounces) can of diced tomatoes
1 c diced celery (about 3 stalks
½ c water, then more as desired
3 (8 ounces) cans of tomato sauce
2 teaspoons granulated sugar
1 ½ teaspoons dried basil
1-pound lean ground beef
1 teaspoon dried oregano
2 tablespoons olive oil, divided
3 tablespoons minced fresh parsley
¾ teaspoon dried thyme
1 (15 ounces) can of dark red kidney beans, drained and rinsed
1 c diced carrots (about 2 medium)
Salt and freshly ground black pepper
1 (15 ounces) can of great northern beans, drained and rinsed
1 c dry ditalini pasta
Directions:
Place a large pot on the stove and turn the heat to medium-high.
Add one tablespoon of olive oil and allow it to become hot.
Add the ground beef into the hot pot, then cook for a few minutes until crumbly and brown. Transfer the cooked ground beef onto a clean plate.
In the same empty pot, add 1 tbsp of olive oil and allow it to become hot again.
Add the carrots, celery, and onions. Sauté for 6 minutes or until soft.
Add garlic and sauté for a minute or until aromatic.
Add the marjoram, tomato sauce, thyme, sugar, chicken broth, canned tomatoes, basil, water, cooked beef, salt, oregano, and pepper. Stir everything until well blended. Let the mixture boil.
Turn the heat down to medium-low, then cover the pot and simmer for about 20 minutes. Make sure to stir from time to time.
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Add the cooked pasta into the pot with the soup together with the beans. Stir everything until well incorporated. Add a bit of pasta water if necessary. Cook for a minute.
Add parsley and stir until well combined.
Sprinkle each serving with grated Parmesan cheese.
