Ingredients:
2 whole Eggs
1 lb. diced pancetta or diced thick-cut bacon
1 ½ c grated Pecorino Romano cheese divided
1 tbsp salt
½ tsp freshly ground pepper
4 Egg yolks
1 lb. spaghetti pasta
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt, then cook for a few minutes until al dente. Set aside about 1 ½ cups of the water, then drain the pasta and set aside.
Place a large saucepan on the stove and turn the heat to medium. Add the pancetta, then cook for about 7 to 10 minutes or until crispy. Leave only 2 tbsp of the accumulated fat in the pan and discard the rest.
In a bowl, add 1 cup of Pecorino Romano cheese, eggs, and egg yolks. Whisk until well incorporated.
Add the drained pasta into the pan with the crispy pancetta, then toss until completely coated.
Add the egg mixture together with ½ cup of the pasta water, then toss again until well combined.
Serve right away. Enjoy!
