Ingredients
4 tbsp olive oil
3 lbs (1.36 kg) petite red potatoes, scrubbed and halved (quartered if extra large)
6 cloves garlic, minced
2 tbsp unsalted butter, cut into small cubes
1 tsp dried thyme
½ tsp (0.5 tsp) dried basil
½ tsp (0.5 tsp) dried oregano
⅓ c. (33.33 grams) grated Parmesan cheese
2 tbsp minced fresh parsley
1½ tsp (1.5 tsp) kosher salt
1 tsp ground black pepper
How to make Parmesan Roasted Red Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees. Ready a large baking sheet. Lightly grease and set aside.
Step 2: Place the potatoes, olive oil, garlic, salt, pepper, thyme, oregano, basil, and Parmesan cheese in a large bowl. Mix well until the potatoes are evenly coated.
Step 3: Onto the prepared baking sheet, transfer the mixture, and arrange it in a single layer.
Step 4: Place in the preheated oven and bake for about 45 minutes to 1 hour, flipping the potatoes using a spatula, about two or three times during baking, until the potatoes are golden brown and crisp.
Step 5: Pull out the tray. Over the potatoes, sprinkle the butter. Stir well until the butter has melted.
