Oh, my! I am so impressed with this awesome dish! These Parmesan Roasted Potatoes are so good that this was probably my third time cooking it this week! A big thanks to my good friend, Jessica, for sharing this recipe with me because now, I get to share it with you as well. How awesome is that? As perfect as this recipe already is, feel free to add more ingredients if you wish. I am sure that you can do a lot to make this even better! Ingredients:
2 pounds red potatoes – washed
⅓ c grated Parmesan cheese
1 stick butter – ½ c
1 tsp salt
3 tbsp herb seasoning – divided (any brand – I use Mrs Dash)
½ tsp black pepper
nonstick cooking spray
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Add one stick of butter into a 9×13-inch baking pan. Place it inside the preheating oven and allow it to melt.
Remove the pan from the oven.
Slice and score the potatoes.
Add 2 tbsp of herb seasoning, pepper, and Parmesan cheese into a mixing bowl. Stir until well blended.
Sprinkle the seasoning mixture over the melted butter in the baking pan.
Arrange the potatoes into the prepared pan.
Apply cooking spray over the potatoes, then sprinkle the rest of the herbs.
Put it inside the preheated oven and bake for about 40 minutes or until the potatoes are fork-tender.
Remove from the oven and let them rest for a few minutes at room temperature.
Serve and enjoy!
