Ingredients:
3 medium potatoes russet
1 tsp sweet paprika
1 pound of smoked turkey sausage, cut into rounds
½ tsp freshly ground black pepper
1 large onion, peeled and chopped
½ tsp fine sea salt
1 tbsp olive oil
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line a baking sheet with tin foil, then apply cooking spray to it.
Slice the sausage into small rounds. Chop the potatoes and onions into small pieces as well.
In a large bowl, add the onions, potatoes, and sausage slices.
Add salt, paprika, 1 tbsp of olive oil, and pepper on top of the sausage and potatoes in the bowl. Toss everything until well incorporated.
Transfer the mixture onto the prepared baking sheet and spread it evenly.
Place the baking sheet pan in the preheated oven and roast the sausage and potatoes for about 45 minutes to 1 hour or until the potatoes are fork-tender. Make sure to stir them every 15 minutes or so.
Remove from the oven and allow it to rest for a few minutes at room temperature to incorporate all the flavors.
