Ingredients:
1 c panko bread crumbs
1 tsp dried oregano
(1) Egg
2 tbsp olive oil
1 ½ c shredded mozzarella
½ c parmesan cheese fresh grated
1 c marinara sauce
(2) chicken breasts, about 1 lb. of chicken
1 tsp kosher salt
½ tsp black pepper
2 tbsp minced parsley optional, for garnish
½ tsp garlic powder
Directions:
Line with foil a baking sheet, then brush it with olive oil.
Prepare the oven and preheat to 200 degrees C or 400 degrees F. Place the oven rack in the middle.
Slice the chicken into ½, then gently pound each with a meat mallet.
Use paper towels to pat dry the chicken breasts, then sprinkle salt and pepper to season.
Add grated Parmesan cheese, panko breadcrumbs, garlic powder, black pepper, oregano, salt, and pepper into a mixing bowl. Whisk until well blended.
Add cracked egg into a separate mixing bowl. Whisk until creamy.
Dip each chicken slice into the egg, then into the bowl with the breadcrumb mixture. Shake off any excess.
Arrange the chicken breasts onto the prepared baking sheet. Make sure to leave a small space between each slice.
Put the baking sheet inside the preheated oven and bake the chicken for about 15 minutes or until done.
Turn the chicken over, then add ¼ cup of marinara sauce on top and spread it evenly.
Put them back inside the oven and broil for 4 minutes or until the cheese has melted completely.
Remove from the oven and allow the chicken to rest for a few minutes at room temperature.
Serve warm and enjoy!
