Ingredients:
1 tbsp olive oil
½ tsp garlic powder
⅛ tsp cayenne pepper
½ tsp paprika
½ tsp onion powder
2 tbsp unsalted butter, diced
1 tsp salt
1 tsp instant chicken stock, optional (lower the salt amount if using)
Fresh chopped parsley, for garnish
¼ tsp fresh ground pepper
1 lb (450g) chicken breasts, skinless and boneless
1 tsp Italian seasoning
Directions:
Prepare the oven and preheat to 220 degrees C or 420 degrees F.
Slice the chicken into 1-inch pieces.
Add garlic powder, Italian seasoning, onion powder, cayenne pepper, paprika, chicken stock, pepper, and salt into a mixing bowl. Whisk everything until well incorporated.
Put the chicken pieces into the prepared baking dish and arrange them in a single layer.
Add the seasonings and olive oil over the chicken, then toss them until well coated. Top them with dots of butter.
Place the baking dish in the preheated oven and bake the chicken for about 16 to 18 minutes or until done. You can broil them for about 2 minutes if you wish.
Remove from the oven, then garnish with freshly chopped parsley. Let the chicken bites rest for at least 5 minutes at room temperature.
