This Oven Baked Chicken and Rice is my family’s ultimate comfort food! It is so easy to prepare. This is a complete meal. The flavors of the chicken made the rice extra flavorful! This recipe is a must-try, I’m telling you!
Ingredients:
2 tablespoons (30g) butter (or olive oil)
1 ½ c (270g) uncooked white rice
1 ½ c (375 ml) chicken broth/stock, hot (I microwave)
5 bone-in chicken thigh fillets, peel skin OFF
1 ¼ c (315 ml) water, hot (tap is fine)
2 cloves garlic (large), minced
1 onion, chopped (brown, white, or yellow)
CHICKEN RUB
½ teaspoon garlic powder
Black pepper
1 teaspoon dried thyme
¾ teaspoon salt
½ teaspoon onion powder
1 teaspoon paprika powder
OPTIONAL GARNISH:
Fresh thyme leaves or finely chopped parsley
Oil spray
Directions:
Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Add garlic and onion into a 10×15-inch baking dish and spread them evenly.
Add butter to the middle of the baking dish.
Place it inside the preheated oven and bake for about 15 minutes.
In a mixing bowl, add all the ingredients for the chicken rub. Whisk until well blended.
Sprinkle the chicken rub over the chicken, then toss until well coated.
Remove the baking dish with the butter from the oven, then stir in the rice.
Add the chicken over the rice.
Pour in water and chicken broth around the baking dish.
Cover the baking dish with aluminium foil, then put it back inside the oven and bake for about 30 minutes.
Remove the foil cover, then bake for 20 more minutes.
Remove from the oven and allow the Oven Baked Chicken and Rice to rest for at least 5 minutes at room temperature.
Fluff the rice with two forks.
Sprinkle freshly chopped thyme or parsley on top to garnish. Enjoy!
