Ingredients:
Salad:
1 c slivered almonds – toasted
A bunch of green onion, chopped
1 c sunflower seeds
2 (8 oz.) packages of broccoli slaw mix
2 (3 oz.) packages of beef or oriental flavor ramen noodles – packets removed, and noodles, crushed a bit (you still want to have some clumps)
Dressing:
1 seasoning packet from the ramen
⅓ c white vinegar
¾ c olive oil
½ c sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Scatter the slivered almonds onto a cookie sheet.
Place the cookie sheet inside the preheated oven and toast the almonds for about 5 minutes or until they turned golden brown.
Remove the toasted almonds from the oven and allow them to cool at room temperature.
Add ramen noodles, broccoli slaw, almonds, sunflower seeds, and green onions into a large serving bowl. Make sure to layer them correctly.
In a mixing bowl, add all the ingredients for the dressing. Stir until well blended.
Add the dressing on top of the salad to coat it well.
Place the bowl inside the fridge to chill for a few minutes or hours.
Toss everything, then serve chilled and enjoy!
Notes:
Feel free to use cashews or peanuts for this recipe instead of almonds.
You can also use rice wine vinegar instead of white vinegar.
You can use bottled dressing for this recipe.
If you want, you can add sliced chicken on top of the salad.
You can use red onion for this recipe instead of green onion.
