Ingredients:
¼ c flour
1 c onion, thin sliced
¾ c chicken stock
2 tbsp butter one to sear chops, one to brown mushrooms
6 pork chops
1 tbsp olive oil
Salt and pepper to taste
1 lb. cremini mushrooms – sliced
¾ c beef stock
Directions:
Sprinkle a bit of salt and pepper over the pork chops, then rub each until coated.
Place a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp butter and 1 tbsp oil, then allow them to become hot.
Add the pork chops into the hot skillet, then sear each side for about 3 minutes or until they turn golden brown.
Remove the pork chops from the skillet and move them onto a clean plate.
In the same empty skillet, add 1 tbsp of butter and allow it to melt.
Add the onions and mushrooms, then sauté for about 5 minutes or until they are soft.
In a small bowl, add chicken stock and beef stock. Stir until well blended. Whisk in the flour.
Pour the mixture into the skillet with the veggies, then scrape the bottom to get the browned bits. Stir everything until well blended.
Simmer the mixture for about 2 minutes or until thick.
Turn the heat down to low, then put the pork chops back into the skillet. Toss them until coated with the sauce.
Cook the pork chops for 10 more minutes. Remove from the heat.
Serve and enjoy!
Notes:
You can use heavy cream instead of ¼ cup of stock.
Place any leftovers in an airtight container, then place them in the fridge.
