Ingredients:
Chicken Thighs
2 tbsp Adobo seasoning or your favourite chicken seasoning
2 -2 ½ lb. chicken thighs about 5
1½ tsp salt
½ tsp chicken Goya Sazon or bouillon powder optional
One-pot rice
2 c uncooked long-grain rice
½ c tomato sauce
2 small bay leaves
2-3 tbsp Fresh cilantro
¼ c canola oil
2- tsp minced garlic
1 c pitted olives
½ medium onion diced
4 c chicken broth or water
15.5 ounces can Pigeon Peas/ rinsed and drained
1 tsp cumin spice
1 large bell pepper sliced
1 packet Goya Sazon
1 tsp paprika optional
Salt to taste
1 tsp white ground white pepper
Directions:
Use paper towels to pat dry the washed chicken thighs.
Create a small slit to each chicken thigh, then rub each with a bit of salt.
Season each chicken thigh with the adobo spice blend.
Place a Dutch oven on the stove and turn the heat to medium-high.
Add the chicken thighs skin side down, then sear each side for a few minutes until they just turn brown. Transfer onto a clean plate.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add the rice into a large mixing bowl, then pour in water. Clean the rice with your hand, then discard the water. Repeat two more times.
Wipe clean the pan, then add 2 tbsp of oil and allow it to become hot.
Add the garlic, onions, bell pepper, cumin, cilantro, and bay leaf. Saute until soft and aromatic.
Add the tomato sauce, then stir until well blended.
Add the rice and stir until just mixed. Simmer for about a minute.
Add the rest of the ingredients, then stir until well blended. Allow the mixture to boil.
Transfer the pan inside the preheated oven and cook everything for about 35 minutes or until done.
Remove from the oven, then allow it to cool for a few minutes at room temperature.
Serve warm and enjoy!
