Ingredients:
1 pound ground beef
1 small onion, diced
Salt & pepper, to taste
2 tablespoon taco seasoning
1 teaspoon garlic powder
1 c long-grain white rice, SEE NOTE
1 ½ c beef broth
1 15 ounces can corn, drained
8 ounces tomato sauce
½ c salsa
1 c shredded cheese
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add in the ground beef and cook for several minutes until crumbly and brown. Make sure to season it with salt and pepper to taste.
Step 3: Remove from the heat and drain excess oil from the skillet.
Step 4: Put the skillet back to the heat, then sprinkle garlic powder and taco seasoning over the beef.
Step 5: Add in the rice, corn, tomato sauce, broth, and salsa. Stir until well combined.
Step 6: Cover the skillet and allow the mixture to boil.
Step 7: Reduce the heat to low and simmer for 18 to 20 minutes or until the rice is soft.
Step 8: Spread the cheese over the rice and cover.
Step 9: Leave it for 2 to 3 minutes or until the cheese has melted completely.
Step 10: Spoon the rice casserole onto a serving plate.
Step 11: Serve and enjoy!
Notes:
Feel free to use any type of rice for this recipe.
Instant rice usually cooks for about 5 to 7 minutes.
