Ingredients:
CHICKEN AND MARINADE
1 tablespoon dried oregano
4 garlic cloves, minced
½ teaspoon salt
1-2 lemons, use the zest + 4 tablespoons of lemon juice
5 chicken thighs, skin on, bone-in (about 1 kg / 2 pounds)
RICE
1 ½ c (375 ml) chicken broth / stock
1 c (180g) long grain rice, uncooked
¾ c (185 ml) water
1 small onion, finely diced
¾ teaspoon salt
Black pepper
1 tablespoon dried oregano
1 ½ tablespoon olive oil, separated
GARNISH
Fresh lemon zest (highly recommended)
Finely chopped parsley or oregano (optional)
Directions:
In a large resealable bag, add all the ingredients for the marinade. Seal the bag, then shake it until everything is well blended. Let the chicken marinate for 20 minutes or overnight.
Prepare the oven and preheat to 350 degrees F or 175 degrees C.
Remove the chicken from the bag, then set aside the marinade.
Place a deep, heavy-duty skillet on the stove and turn the heat to medium-high.
Add ½ tablespoon of olive oil and allow it to become hot.
Add the chicken thighs into the hot skillet, then sear each side for a few minutes until they turn golden brown. Transfer the seared chicken thighs onto a clean plate. Wipe clean the skillet.
In the same empty skillet, add another tablespoon of olive oil and allow it to become hot.
Add the onions, then sauté until soft.
Add the marinade and the rest of the ingredients under Rice, then stir everything until well mixed.
Allow the mixture to simmer for half a minute, then put the chicken thighs back into the skillet over the rice. Cover with the lid.
Transfer the skillet to the preheated oven and bake for about 35 minutes.
Remove the cover and bake for 10 more minutes or until done.
Remove the skillet from the oven and allow it to sit at room temperature for a few minutes.
Squeeze lemon and sprinkle freshly chopped parsley on top.
